Low Carb Gluten Free Chicken Tenders.. So GOOD!

My kids love chicken fingers, but I have a hard time buying the frozen processed junk at the store. I came up with this freezable, yummy chicken finger alternative, and they were a huge hit at my house!

Here is what you will need:

1/2 bag pork rinds

1 tablespoon of flax meal

teaspoon of parsley flakes

4 eggs

1/2 cup of gluten free flour ( I use red mill)

1 lb or more Thin sliced chicken breast cutlets

2 cups sunflower oil ( or another tasteless oil that can stand up to high temps.)

Directions:

First, you will need to create an egg wash.

Grab 3 large bowls. In the first bowl, dump in the gluten free flour. In the second bowl, Break the eggs and beat them until yolks and whites combined, like you are making scrambled eggs.

In the third bowl, add the parsley flakes, flax seed and 1/2 bag ground pork rinds. ( I grind pork rids by placing them in a large zip lock bag and whacking them with a meat hammer until they are a fine flour. )

OK now that the egg wash is ready, lets prepare the chicken. Be sure that the chicken is not too thick. cut it into strips and get ready to bread it!

Ok, now it’s time to bread the chicken! Place a piece of chicken in the gluten free flour. Then dip it in the eggs. Finally, coat well with the pork rind mixture and place on a large plate. Bread all the chicken cutlets this way.

To fry the chicken fingers, you will need a large 10-12 inch skillet. Set the temp on the stove top to medium and place the 2 cups ( or however much oil you need to fill the pan about 1/3 full of oil.) into the skillet. Heat on medium until oil is at frying temperature. ( about 5 min/ 350 degrees)  The best way to tell if the oil is ready is to take the end of a wooden spoon and place it i the center of the pan in the oil. If you see small bubbles around the spoon, then it is ready.

Place all of the chicken strips in the oil and cook for 7 minutes. Then flip the chicken fingers and cook for another 7 minutes, or until desired crispiness is achieved. Temp the chicken by inserting a meat thermometer into the thickest piece of chicken. If the temp does not read 165 degrees, then the chicken is not done and needs to cook a few minutes longer. Remove cooked chicken from the frying pan and enjoy! To freeze, allow tenders to cool for 10 minutes, them place in a freezer safe storage container or zip lock bag. To reheat, cook at 375 for 20 minutes. YUM!
